Scent is processed by the olfactory bulb, which has direct connections to the amygdala and hippocampus, the parts of the brain responsible for emotion and memory. Unlike other senses, smell bypasses the thalamus entirely, which is why a fragrance can trigger an emotional memory almost instantaneously, before you have even consciously identified the scent.
This is known as the Proustian memory effect, named after the writer Marcel Proust, who described how the smell of a madeleine cake dipped in tea transported him vividly back to his childhood. Most of us have experienced something similar.
